white chili

This recipe is simple enough it just takes time because we cook the beans from scratch. You can buy the beans in a can and just add them to the turkey mixture along with a little liquid for the same effect. I find that if I have two or three kinds of white beans in the pantry I mix up the blend of the beans for a great flavor. Its the broth that the beans produce that makes this dish. I will also add cumin and chilies to the beans for additional flavor as well. Play with this dish to your own desires and tastes. You can also top with a great white mexican cheese.

White Chili

prep time 20 min
cooking time 3-4 hours depending on the beans

Ingredients
1 lb ground turkey
salt/pepper to taste
2 Tbsp olive oil
1 lb dried beans, great northern or pinto
2-3 onions
2-3 tomatillos
2-3 jalapeno peppers (remove seeds for a milder chili)
1 teaspoon ground cumin

Start cooking washed beans in chicken stock or water. Make sure you have plenty of liquid in the pan. Bring to a boil, cover and reduce to a simmer.  The beans will start to absorb the liquid and you need to keep an eye on them and add liquid as needed. In a large pot brown the turkey in half the olive oil. Remove to a bowl. Add onions, tomatillos and jalapeno to pot with rest of olive oil. Add cumin and salt and pepper to taste. Cook until softened. Add turkey ans blend. Remove from heat. When beans are soft add the turkey mixture to the pot and stir. If need add more liquid to desired consistency. Heat thru and serve.

week 18 – menus and shopping list

The end of this week is Christmas eve and we have a nice chicken with orange and rice. Home made holiday treats for dessert. Many of the items on this weeks menu comes from item in the freezer or pantry. I buy large packages of pork chops on special and freeze them for future meals.  The same with bacon, I buy it when there is a great price on it and use what I need for a recipe and freeze the rest. We tried to keep it simple from a shopping stand point and so that you could also put a little more of your budget on the Holiday meal. The white chili recipe is so good and hearty. Perfect for a winters evening.

MONDAY
Breakfast Cereal hot or cold, orange juice
Lunch egg salad sandwich, carrot sticks
Dinner pork chops with apple and bacon frozen vegetable, salad

Lunch cold pork sandwich, fresh or canned fruit
Dinner Pasta with broccoli, fresh or canned fruit

WEDNESDAY
Breakfast cereal hot or cold, orange juice
Lunch white chili, fruit
Dinner simple chicken pot pie, salad

THURSDAY
Breakfast Breakfast sandwich, orange juice
Lunch  pasta with broccoli, carrots
Dinner salad w/ tuna , fresh or canned fruit

FRIDAY
Breakfast cereal hot or cold, orange juice
Lunch chicken pot pie, fresh or canned fruit
Dinner   pizza with sausage and olives (make a big bowl of popcorn and watch a movie)

SATURDAY
Brunch Breakfast hash, orange juice
Dinner orange chicken on rice, salad, cookies
