week 28 – menus and shopping list

This week we stretch the dollar by using the leftover chicken from last week in two dishes. The beef for the stroganoff comes from large chuck roasts I buy on sale or at  the discount clubs. I cube the meat and then freeze it in smaller packages. This is such an easy recipe after browning the meat with mushrooms and onions I then stir in sour cream or greek yogurt. Season to taste and serve. Great dish to re-heat and serve. Make the meat loaf from ground beef or ground turkey. I almost never make the same meat loaf. I use what I have on hand to make it interesting. A good mustard or worcestershire sauce and ketchup always adds flavor. Bind with bread crumbs (I use a half of a English muffin) and an egg.

Week 27 – Menus and shopping list

We start the week of nice and easy with boiled dinner using corned beef. You can use the left over brisket to slice for the Rubens and cube it for the corned beef hash. We have some old stand by meals for lunch but again if you have soup in the freezer use it up for lunch. The curried lentil soup and pan roasted salmon add some nice new flavor. We finish the week with a roasted chicken. Save the leftovers for chicken soup next week.

Week 26 – Menus and shopping list

This week we are half the way through for a year. Our goal is to provide a nutritious meal plan every week without repeating ourselves. We start the week of nice and easy with sloppy joe’s. You can use the left over pork roast to shred for the sloppy joe’s or use ground turkey or beef. Hopefully you have some on hand to keep your food costs down. In fact this week we are trying to clean out the freezer. Many of the items needed this week might be stored there. Six months is long enough for anything to be kept frozen. We will be posting more of the recipes soon. We end the week with beef stew. I bought a chuck roast on sale and had it in the freezer to use in the stew.

Week 25 – Menu and shopping list

This week we we again start with a roasted chicken. We roast the cauliflower along with it and the roasting of the cauliflower adds so much flavor. Another flavor booster is to caramelize the onions before you mix them into the turkey meatloaf. I buy my ground turkey in the tubes frozen. Especially when they are on sale. You can find ground turkey on sale for as low as 99 cents a pound. I also buy pork tenderloins on sale and freeze them. The apple sauce you make with this recipe is delicious.

Week 24 – Menu and shopping list

This week we start with easy spaghetti and make enough to have friends. You also have some left over for lunch a couple of days. The apple squash soup is also good for a few meals or freeze some of it for a later use.  Note on Thursday I have soup and grilled cheese. This is because every week we have a soup on the menu. Many times we have some left overs in the freezer. This is an opportunity to use it up. The chicken pot pie is made from things we have on hand. If you do not have frozen chicken breasts in your freezer pick up some for this recipe.

This week we start with a hearty vegetable soup that has cabbage in it. We also use the cabbage in the asian noodle salad midweek for a very different taste. Interesting how one vegetable can offer two distinct flavors. We end the week with a roasted herbed chicken and potatoes for a meal good enough to invite guests over. Have them bring the dessert.

This week we start with a great turkey chili and cornbread. A wonderful meal when you have an active winter Sunday. Again ground turkey especially frozen in many chain stores and be found for well under $2 a pound. I have found corn bread in a package form for 49 cents. Use some of it for another meal.We end the week with a sirloin pork roast. When you see one on sale pick it up and cut it into chops or freeze it for future use. This will make great sandwiches and another hot meal. I buy frozen hamburger patties in bulk and have them in the freezer for fill in meals every so often as we have here on Wednesday

Pork Chops in Mushroom Gravy

This is an easy recipe and the soup makes a great gravy that adds a wonderful flavor. Cook this in a slow cooker or in a low oven at 225 degrees for 3-4 hours.

Pork Chops in Mushroom Gravy
prep time 20 min
cooking time 3-4 hours 

Ingredients
1 pork chop per person
salt/pepper to taste
2 Tbsp olive oil
1 potato per person quartered
1/2 bag small peeled carrots
1/2 lb fresh mushrooms
1 can golden mushroom soup

Brown chops on all sides in dutch oven or put in slow cooker. Add potatoes, carrots, mushrooms to pan. Salt and pepper. Add can of soup cover and simmer in oven at 225 degrees or slow cooker for  minimum 3-4 hours. Test potatoes and carrots with a fork to make sure they are done. Serve and ladle sauce as a gravy.

This week we start with a roasted chicken and make three meals with it. A great money stretcher, I have found so many good deals on whole chickens. I can buy a frozen one at a national chain fore 85 cents a pound. The chicken tortilla soup is so good on a winters evening. Debone the left over chicken for the bones. Simmer them for 5 hours to make a great base for the soup.

Start the week off with a slow roast pork that can be used for pulled pork sandwiches later in the week. Just add your favorite sauce and reheat. Serve on buns. Because we feature a soup every week we think you may have some left over in your freezer. That is on the menu for Thursday evening. We tried to keep the meals lighter this week after all of the holiday food.
